Lately I have been craving anything pumpkin…
maybe its part of my wishful thinking that fall weather will hurry up so I can wear some boots and leggings!
Either way…
In honor of it officially being October I tried a new recipe this morning and it was DELICIOUS!
(even Taylor (who doesn’t like pumpkin) and Briley (who doesn’t like food in general) enjoyed it!)
Sp I thought I’d share and highly encourage this recipe!
Ingredients
bread ( I made 6 slices and had leftover batter)
3 eggs
1/2 cup milk
3/4 cup canned pumpkin
1 tsp homemade pumpkin pie spice
Butter and syrup for servingDirections
Set out the bread for dipping.
In a medium mixing bowl, whisk together the eggs, milk, pumpkin and pie spice until smooth.
Dip each side of the bread and cook on a hot, greased griddle or skillet. Flip after 1 – 2 minutes.
Once all are cooked, serve with butter and maple.
